Our Turkish Delight Cheesecake is great dessert for when the family is round. Here’s how to make it at home.
Ingredients (serves 8-10):
200g Rich Tea Biscuits
3 tbsp Coco Powder
80g Unsalted Butter
2 tbsp Clear Honey
4 Leaves of Gelatine
250g Cream Cheese
25g Caster Sugar
250g Sour Cream
2 tbsp Milk
150g Chocolate Covered Turkish Delight
Crush the biscuits and mix with the cocoa powder. Melt the butter and add the honey. Combine together.
Grease and line a spring-form cake tin (20cm) and press mixture into tin, then refrigerate.
Soak the gelatine leaves in cold water until soft then squeeze out the excess water.
Beat the cream cheese until soft, then add the sugar and sour cream and beat well.
Heat the milk in a saucepan and remove from heat. Add gelatine to the milk and stir to dissolve.
Add the milk to the cream cheese and combine well.
Roughly chop the Turkish delight and add to the mix, then add rosewater to taste.
Lightly pulse with a blender briefly, then pour on to the base and refrigerate to set for a couple of hours.
We like to serve it with fresh raspberries and raspberry coulis at home.
