Samuel James Events Recipe: Flambéed Jamaican Bananas
This is a must-try recipe. It’s quick, simple and really hits the spot. They’re great after a BBQ when sitting in the sun.
Ingredients (serves 4):
2 Ripe Bananas
50g Unsalted Butter
100g Soft Brown Sugar
20ml Fresh Orange Juice
1tsp Mixed Spice
1tsp Vanilla Extract
A Good Glug of Dark Rum
Toasted Desiccated Coconut
Coconut Ice Cream
Half a Lime
Method:
Place the butter and sugar in a pan over a medium heat. Allow sugar to dissolve and turn a caramel colour.
Add in the orange juice, mixed spice and vanilla and combine. Now let it reduce for 2 minutes.
Slice the bananas (half inch thick) and add to the pan. Stir gently into the sauce.
Being very careful (especially of your eyebrows!), pour in the rum and tilt the pan to flambé. Let it flambé for 30 seconds and then stir gently to extinguish any remaining flames.
Serve over coconut ice cream (vanilla is good too) and top it with a sprinkling of the toasted desiccated coconut and a squeeze of lime.
P.S. If you’re feeling a little bit more greedy, then it’s also great with fresh waffles or pancakes!
